Daniel Berkey
Daniel Berkey is a driven and compassionate student currently studying Neuroscience at Binghamton University. In addition to making chocolates, Daniel's passions include coding, gardening, neuroscience, reading, philosophy, movies, and volunteering. The idea of One Cacao came from Daniel's desire to mix his love for volunteering with chocolate into an activity that gave back to the community in a way that was fun and engaging for everyone.
At Binghamton, Daniel is the founder of the One Cacao club, which hosts many activities that take a look at different areas of study through the art of chocolate. This includes chocolate-making classes where students can join Daniel in his efforts to give back in unique and exciting ways.
Mastering the Craft
In order to cultivate the best flavors possible, Daniel has gone through many forms of education to perfect his chocolate making. He has studied at the Institute of Culinary Education in order to properly master the art of chocolate making. Moreover, Daniel has read vigorously on the history and origin of chocolate and has become more familiar with the different flavor profiles that exist.
Giving back with every bite
The main goal of One Cacao is to offer people a fun and easy way to serve their community. Simply by buying a chocolate, you can help these programs in their fight against poverty.
Sourcing
After meticulous research, only the most aromatic and deep, rich cacao is chosen to be used in our chocolates. Criollo is the rarest variety of cacao in the world, known for its complex and elegant flavor profile. The chocolate is sourced from Madagascar, Venezuela, and Colombia.
Flavor Palate
A small team of chocolatiers and chefs educated by the Institute of Culinary Education in NYC comes up with complex and unique combinations of flavor to provide you with an explorative experience.
Tempering
The final step. Careful temperature cycling aligns the cocoa butter crystals, giving our chocolate its signature snap, deep scent, and glossy sheen.
Indulgence
Lastly, our chocolate is sent out all around NYC to be enjoyed by our incredible customers. Chocolate is hand-delivered and treated with care before YOU can finally taste the product of such hard, delicate work.
